Guacamole. Who doesn’t love guacamole?! If you don’t then you just haven’t tried the right one. This guacamole is our own creation combining some bold flavors that we love that really perk the guac up from bland and boring to feisty and flavorful.
I’ve made this recipe a lot and it’s never quite the same. Each batch is unique and that’s what makes it so fun. Do you want to add a little more spice? Throw it in. Back off on the onion? Do it. Our family has a garlic addiction. If you don’t love it as much as we do you can always decrease the amount you add or omit it all together. It’s your guacamole!
My husband, Jimmy, and I LOVE avocado and now our babes, Sophia, does too. Luckily we live in South Florida and most of the time we can get a great deal. Avocado plain or with a pinch of garlic salt is a tasty treat but even the baby started to reject my love of plain avocados. That’s when Zest Guacamole was born!
For our guacamole recipe, and in many other of our recipes, it calls for grated garlic. We snagged this little gem up at our local arts and craft fair, but they can be found online here for a pretty reasonable price. It can be used for a variety of things like making strawberry puree, grating carrots, onions, or anything really, but we mostly use it for 2 things: garlic and ginger. It keeps you from getting those pungent bites of under chopped garlic (not everyone loves garlic as much as we do), but also saves you a ton of time from chopping. I was amazed at how often we actually use it!
Ingredients
- 3-4 Ripe Avocados
- 2-3 large cloves of garlic grated
- 1/2 large red onion diced
- 1/2 bunch of cilantro chopped (stems and all - make sure you rinse it first, that stuff can be sandy!)
- Green onion (yest more onion! Again, leave out what you don't like)
- 1 large tomato diced
- Juice from 1 lime
- garlic salt & pepper to taste
- 1-2 splashes (approximately 1-3 Tbsp) Apple Cider Vinegar
- Optional: 1/2 Tbsp chipolte powder and/or cayenne to taste
Instructions
- Cut avocados in half, remove pit, scoop out in to bowl & mash with fork. No need to make it smooth. A couple of things that are OK chunky: baby thighs and guacamole!
- Add onion, garlic, tomato, cilantro, salt and pepper, lime juice, and 1 splash apple cider vinegar
- Stir & taste. Add more salt and pepper or vinegar to taste.
- For an extra kick add chipolte or cayenne powder.
This guacamole combines the creaminess of traditional guac with the acidity of Pico (see our recipe here) and a little bit of cayenne for spice. Ripe tomatoes, onions, and garlic combined with lime juice and a few splashes of apple cider vinegar give this guac something that just keeps you coming back for more.
