Around our house tacos are a staple. Any number of flavors can be combined to create a new and satisfying lunch, dinner, or even breakfast. Over the years we have perfected the art of making the majority of these delicious creations in less than 30 minutes which makes them perfect for a last minute weeknight meal.
Our Easy Asian Tacos are one of my favorites because I don’t even need to get the stove dirty! They cook in their own marinade in the oven. While those juicy little morsels are soaking up flavors in the oven I quickly throw together a slaw that transforms this dish from boring to beautiful.
The secret to why these tacos are so juicy and full of flavor is the fact that they are cooking in the “marinade”. 375 degrees is the perfect temperature to let those juices penetrate the chicken and create a bit of caramelization.
That cooking time also provides a perfect window to prep your slaw as well. Yay for multitasking!! I don’t know about you, but our little munchkin is only content in her highchair watching me chop, mix and stir for so long. That and who wants to be cooking all night anyway?
Easy Asian Tacos
Ingredients
For the Chicken:
- 4-6 corn tortillas
- 3 chicken breasts or 2 small packs of thighs cut in to 1" cubes
- 2 tbsp Garam Masala (can substitute 5 spice)
- 1/3 cup Soy Sauce
- 1/3 cup Ponzu (located in Asian isle near the Soy Sauce - can be substituted for additional 1/4 cup of soy sauce and 1/4 cup citrus juice)
- 1/4 cup Brown Sugar
- 1/2 bulb Garlic chopped
- 1 tsp Cayenne Pepper
- Salt to taste
For the Slaw
- 1/2 cucumber
- 2 Large Carrots
- 1/4 Red Onion
- Handful of Cilantro chopped
- 1/4 cup Ponzu
- 3 Tbsp Soy Sauce
- 1 Tbsp Honey
- 1 Tbsp garlic powder
- Salt and pepper
Instructions
For the Chicken
- Preheat oven to 375
- Place chicken in 8x8 glass baking dish
- In separate bowl combine all other ingredients and pour over chicken
- Palce in oven for 30-35 minutes
For the Slaw
- Use peeler to make long, thin strips of the cucumber and carrots
- Slice onion in to thin strips
- Mix all ingredients in bowl and let marinate while chicken is cooking
- Place corn tortillas in toaster oven until desired crispiness is obtained (we like them pliable but crunchy)
- Fill tortillas with chicken and top with cucumber slaw!
