Seared steak, bright arugula, and creamy parm topped with a squeeze of lemon and a drizzle of olive oil. How can something so simple be so delicious? So delicious that thinking about it right now makes me salivate…. I don’t know, but I will tell you that if you have only gourmet one dish that you can make THIS is it!
The simplicity of it is what makes it so sleek and almost, dare I say, sexy. It’s not about a complex list of ingredients or special cooking techniques, but about a few quality ingredients combined to create the perfect Tuscan dish. Tagliata alla Fiorentina is a dish that Florence takes credit for, and it was outside of Florence in a little Tuscan restaurant that we fell in love. I mean that my husband and I fell in love with the dish of course. Though, one bite of this dish and you may fall in love with it too.
Everyone needs at least one gourmet dish up their sleeve and I am confident that this can be yours. My hubby Jimmy, the man behind Cooking with a Fireman, used this recipe as one of his very first attempts at wooing me with his culinary prowess. And… IT WORKED! Remember he was not the same gourmet guru he is today. He was just a regular guy looking to impress his wife.
Ingredients
- New York Strip Steak - 1 per person
- Arugula - 6-8 cups
- Parmesan wedge - approximately 3oz - shaved with peeler
- Garlic cloves - 3 crushed
- Sprig of fresh thyme or rosemary
- 4tsp Olive Oil plus 1-2Tbs extra for finishing
- 2Tbs butter
- Freshly Ground Black Pepper
- Salt
- Lemon Wedges
Instructions
- Preheat cast iron pan to Medium and lightly oil
- Preheat oven to 375
- Pat steaks dry with paper towels and sprinkle generously with freshly cracked pepper and salt. It's best to let the steaks come to room temperature prior to cooking.
- Sear steak for approximately 3 minutes on each side until nicely browned
- Add butter and 4tsp olive oil, garlic and herbs to cast iron
- Spoon butter mixture over steaks repeatedly coating them evenly
- Place cast iron in oven for approximately 8 minutes depending on desired doneness
- Remove and let rest on cutting board for 5 minutes
- Arrange arugula on serving platter leaving a little left over to garnish on top of steak
- Slice steak against grain in to 1/4 inch slices
- Arrange steak on top of arugula
- With vegetable peeler shave parm over steak and top steak with remaining arugula
- Drizzle with remaining olive oil and a sprinkle of finishing salt
- Serve with lemon wedge to squeeze over steak
The recipe I’ve created gives you every step down to the tiniest of details. It looks complex but in reality it is quite simple: cook steak, slice, place on top of arugula, top with parm, olive oil and lemon, and ENJOY!
