Looking for a super easy weeknight meal? On a low or no carb diet? Have a gluten sensitivity? Or maybe you just like creative twists on burgers. Whatever the reason for trying this recipe you won’t be disappointed. This gluten free burger quesadilla was so surprisingly good!
I’m going to be 100% honest. It’s not the most visually appealing meals the hubby has made, but one bite and I knew it was a winner. The beef stays so juicy and the tortilla gets a crispy, crunchy, buttery crust. Something a little different than your average burger, and dare I even say a bit healthier!
As with all of our recipes, if there’s something you don’t like then leave it out. This is your recipe and we encourage you to modify things to your liking. We provide the basic recipe to give you a few firehouse chef level skills and you take it from there. Be creative and have fun!

Ingredients
- Ground beef 1lb
- Montreal Steak Seasoning
- Cheese of choice
- Corn tortillas 8
- Dill pickle chips
- Red onion
- Ketchup/Mustard to taste
Instructions
- Cook burger in cast iron skillet or on grill. Cook just under your liked doneness since it will continue to cook in quesadilla.
- Place tortilla in buttered skillet.
- Sprinkle cheese on the base, add burger patty and top with more cheese.
- Apply toppings to your liking.
- Cook in oiled skillet on Medium heat flipping when golden brown – approximately 10 minutes.
- Serve with extra ketchup and mustard
