You don’t always think gourmet when you think Cobb Salad but when you cook with a fireman nothing is done on a basic level. This variation, appropriately named the Ultimate Cobb Salad, seasons every layer to perfection creating a powerful punch of flavor from the seasoned chicken breast to the zesty, homemade honey mustard vinaigrette.
Not only are the flavors powerful, but its presentation makes it hard to take that first bite. you don’t want to ruin it it’s so beautiful! but get past that fear because once you take your first bite you’re not going to want to stop.
It’s a visually stunning and super healthy dinner that won’t break the bank. It can easily feed a family of 4 for under $20 with leftovers to spare. So grab your favorite knife and start chopping!
Ingredients
For the dressing:
- ¼ cup red wine vinegar
- ¼ cup olive oil
- 4-6 tbsp honey
- Juice from 1 lemon
- 1 tsp garlic powder
- Garlic salt and pepper to taste
For the salad:
- 2 heads heart of romaine lettuce chopped
- 1 pound chicken breast sautéed and chopped
- 1 pound bacon cooked to extra crispy
- 2 hard boiled eggs chopped
- ½ block sharp cheddar cheese cubed in bite size pieces
- 1 cucumber sliced and quartered
- ½ red onion chopped
- 1 pint cherry tomatoes halved
- 1 avocado cut in to cubes
- Paprika
- Garlic powder
- Garlic salt
- Pepper
Instructions
For the Dressing:
- In bowl mix mustard, vinegar, honey, lemon juice, and garlic powder.
- Slowly stream in olive oil and WHISK WHISK WHISK
- Add salt and pepper to taste
For the Salad:
- Season chicken breast with garlic salt, pepper, garlic powder and paprika
- Lightly oil pan and sauté chicken on medium heat until cooked through – turning once
- While chicken is cooking get bacon in pan. Think low and slow with bacon. Turning often to prevent burning. You want it extra crispy for this recipe so you can crumble it for the salad
- Place bed of lettuce on large plate. Square plates work great for this salad
- When chicken is done cut in to cubes
- Top lettuce with each ingredient. It’s great for presentation if you create a line of each item with contrasting colors next to each other – see the picture.
- Drizzle dressing on top. Sprinkle paprika and fresh cracked black pepper on top
It’s a salad that you can serve on a weeknight for your family or even at a dinner party. With loads of protein and heart healthy fats, no one will be left hungry. As always you can put your own spin on things. We have tried it with so many different flavors. My personal favorite is to replace the chicken with grilled shrimp and us a barbeque ranch dressing. My hubby’s is replacing the chicken with skirt steak, the bacon replaced with spicy chorizo and making a vinaigrette out of the steaks’ chimichuri marinade.
