Hi there everyone and YAY for our first guest post. This delectable recipe for Thai Kale Salad comes to us from Miriam and Robert. Miriam and Robert are a fun loving, foodie couple that also happen to be two of the best travel nurses I’ve had the pleasure of working with.
They’ve been everywhere from South Florida to the mountains of Colorado and everywhere in between. They bring their love of cooking and frugal recipes wherever they go. I was lucky enough to stumble upon their culinary skills and even taste a few of their dishes.
This summer brings not only a travel assignment back to Colorado for some hiking and mountain biking, but it also brings their WEDDING! Congratulations guys and thank you so much for the recipe.
According to Robert this recipe came about while trying to sneakily get Miriam to eat kale. We all know it’s one of the healthiest foods out there, but if it isn’t prepared right it can sometimes make you feel like you’re a rabbit munching on some foliage. This recipe combines bright fresh flavors like lemongrass and lime juice with deep and sweet Asian “oooooooo mommy” flavors of the soy sauce and sesame oil. Those powerful flavors are enough to make any vegetable delicious!
This is another budget friendly recipe. Most items are things we keep on hand and last for countless recipes like soy sauce, sesame and canola oil. So discounting those items this recipe comes in at less than $2 per person. It can also be served as a main course simply by adding a protein of your choice.
Kale is one of those veggies that will grow in almost any area as well, and once you get it going it’s hard to stop it! With recipes like this Thai Kale Salad taking kale from boring to delicious, it might be worth trying your hand at a mini garden.
Thanks again to Robert and Miriam for their original spin on an Asian salad. I love that they replace the traditional Napa cabbage with the kale. It is such a budget friendly ingredient and has the ability to fill you up which salads are not known for. Bonus!
Ingredients
For the Salad:
- 1 bag Kale
- 3 large Carrots, peeled
- 2 Bell Peppers (red, yellow)
- ½ Bunch Cilantro
- 4 Green Onions
- ¾ cup Cashew, chopped
For the Dressing:
- 1/3 cup Grape seed or Canola Oil
- 3 cloves Garlic, peeled and chopped finely
- 3 Tbsp Soy Sauce
- 2 Tbsp Water
- 1 Tbsp Sesame Oil
- 1 Tbsp Lemongrass paste (can substitute ginger)
- Juice of 1 Lime
- Pepper to taste
Instructions
- Chop garlic fine, really fine. Keep chopping – place in bowl
- Add remaining ingredients and stir well
- Allow to sit for 30+ minutes
- Chop/Julienne carrots and peppers
- Dice green onions and chop cilantro
- Toss all ingredients together and to with cashews
