At our house we’re always having friends, family or neighbors just stopping by. It drives my hubby crazy, but I ALWAYS have to have something out for guests when they come over. It doesn’t matter what it is really, just something. Could be cheese and crackers, veggies, apples and peanut butter. Anything. I have to have something, but sometimes the pantry items are limited and sometimes I’m too lazy to make a tray or platter so then I use my go to – Last Minute Salsa. Fast, easy and….budget friendly!
Last Minute Salsa didn’t get its name from my need to have a snack out, but it did come from us forgetting we were going to a party and needing something to bring FAST.
I looked in our pantry and saw a staple, canned tomatoes. I don’t think there’s a pantry out there without canned tomatoes in it. I grabbed those canned tomatoes, some cilantro from the garden and a few other staples like garlic and onions and blended away. Added a few seasonings that brought those boring canned tomatoes to life and BAM! Last Minute Salsa was born. It actually became something that people request we bring. Who would have known!
I like to serve it alongside my quick and easy chimichurri and Zesty Guac for a little fiesta. Crazy impressive with minimal effort.

Ingredients
- 2 cans diced tomatoes (garlic & onion or fire roasted are my favorites)
- ½ bunch cilantro
- ½ medium onion
- 1-2 cloves garlic
- Juice of 1 lime (or extra vinegar if you don’t have citrus)
- 2-3 Tbsp Apple Cider Vinegar
- Garlic Salt
Optional:
- ½ tsp cumin
- 1-2 tsp chipotle powder

- Add all ingredients to food processor & pulse until desired consistency is reached. Some like it chunky. Some like it smooth.
This recipe is so quick and easy and is my go to for guests both expected and unexpected alike. Bringing back a little bit of hospitality without breaking the budget or a sweat!
Play around with the spices. Just like with all of our recipes this is a basis for whatever flavor profile you’re feeling. Want some heat? Add a few dashes of cayenne. Like sweet & smoky? Put in a tablespoon of honey and a little chipotle or smoked paprika!
This recipe is great as a dip but also works perfectly for Last Minute Chicken. I’ll get that recipe out to you all soon, but basically it’s just chicken (you can even use frozen) in the Instant Pot with a little last minute salsa. Hello weeknight dinner!!!
