This mix is just nice to have on hand or put it in a mason jar, wrap a ribbon around it and give it as a hostess gift!
Not everyone is gluten free, but if you are or are cooking for someone who is you know that the mixes can get expensive. If you buy a basis of ingredients you can create your own mixes for a fraction of the cost. The mix can be stored in an airtight container and when you’re ready just add the wet ingredients.
Ingredients
- Mix*
- 2 cups rice flour – brown or white
- 1 cup oat flour – make sure to use GF oats if you have a severe allergy. You can grind oats in food processor to make your own oat flour
- ½ cup corn meal
- ½ cup coconut flour
- ¼ cup sugar
- 1 Tbsp baking powder
- 1 tsp salt
- For Pancakes*
- 1 cup pancake mix
- 1 egg
- 1 Tbsp melted butter
- 1 Tbsp coconut oil
- 1 cup almond milk (or milk of choice)
Instructions
- Mix all ingredients together. Store in mason jar.
- When ready place 1 cup of mix in bowl.
- In a separate bowl whisk egg, 1 cup of milk of choice, 1 Tbsp melted butter, and 1 Tbsp melted coconut oil.
- Combine wet and dry ingredients. If too thick add a splash more milk.
- Let sit for 10 minutes so that all of the liquids can be absorbed. Preheat skillet on medium and grease with butter.
- Add approximately 1/4 cup of batter and cook for 2-3 minutes on each side until golden brown
