Let’s talk tacos. At our house tacos are a staple. No, I’m not talking about your standard ground beef and cute little taco kit tacos. I’m talking about any and all things on a taco. I’m talking about lunch meat tacos, Italian beef tacos, Asian chicken tacos, BLT tacos, and much much more.
You can combine a corn tortilla with nearly endless combinations of flavors to make a creative meal in minutes AND on a budget. Allowing you to eat gourmet while keeping your wallet fat and your waistline skinny. Oh yeah in addition to being fast, cheap, and delicious, believe it or not tacos helped me lose the baby weight by forcing portion control. They’re lower in calories than the standard American dinner without loosing any of the flavor. Win, win win!
In honor of our upcoming post ‘How Tacos Saved Our Finances’, we’re going to share a recipe for one of my favorite (and easiest) taco recipes. This recipe can be made in less than 30 minutes, is packed with flavor, and can be transformed in to nearly endless other delectable flavors for future meals.
Simple, easy, delicious…. Pulled Chicken Tacos
I am not big on spending money on things that don’t add significant value to our lives. If I don’t love it AND use it on a regular basis, it’s up for sale faster than you can make these chicken tacos ? That being said, I LOVE MY INSTANT POT. It’s not only cut my meal prepping time like crazy, but it also allows me to make a huge variety of dinners for my family in like a quarter of the time.
Pulled Chicken Tacos
Ingredients
For the Chicken:
- 3-5lbs Chicken Breasts or Thighs
- 2 tsp Paprika
- 1 Tbsp Garlic Powder
- Salt and Pepper
For the Coleslaw:
- 1 Bag Sliced Cabbage
- 1 Large Carrot - grated
- 1/4 Red Onion - sliced thin
- 1/3 Cup Apple Cider Vinegar
- 1/3 Cup Mayonnaise - or try this homemade veganaise recipe
- 1 tsp Garlic Powder
- 1 Tbsp Sugar
- Garlic Salt to taste
- Fresh Cracked Black Pepper - to taste but go heavy
Additional:
- Corn Tortillas
- Hot sauce of choice
Instructions
For the Chicken:
- Place all ingredients in the Instant Pot
- Set to Chicken and let cook - approximately 10 minutes
- Let pressure release on it's own
- Pull chicken with fork
For the Slaw:
- Combine all Ingredients in large bowl
- Let set for minimum of 15 minutes. Gets even better the next day.
For the Tacos:
- Toast your corn tortillas. You can choose to do this in the toaster oven or in a lightly oiled pan flipping once.
- The toaster oven is our quick and easy method and toasts 4+ at a time.
- Top the tortillas with chicken and slaw.
- Add hot sauce if desired
- Enjoy!
The greatest part about this recipe? Once you make the first big batch then future meals take less then FIFTEEN MINUTES to make! Even thought the Instant Pot is fast, the meals that follow are even faster.
Time for some creativity.
That basic pulled chicken recipe can so easily be transformed in to seemingly endless meals and, of course, tacos. You can add your favorite teriyaki sauce to the chicken and top it with thinly sliced cucumber, carrots, green onions and siracha. Mix in some barbeque sauce and top with cheddar cheese and sour cream. Add some sour cream, chili powder, cayenne pepper and a splash of vinegar to the chicken and top with thinly sliced cabbage and red onion. The options are limitless! We’ve even taken the pulled chicken and made chicken salad with it, and yes, still put it on a taco. Aside from the fact that you can have a meal in minutes, these tacos are one of the most budget friendly meals we make. I bet you’re starting to see how we could write a post on Tacos Saving Our Budget huh?
We buy chicken in bulk costing $1.79 per pound for boneless skinless (and hormone free) chicken breasts, a bag of coleslaw is a little more than $1, and a bag of 80 corn tortillas is $2.68! Add in pantry staples and a few of your favorite flavor ingredients and you have the makings for not only one dinner, but 2 dinners, 3 dinners, 4 dinners or MORE! All for under $10!
